Steel Cut Oatmeal with Coconut and Cashews:

This recipe is inspired by my favorite breakfast in Punta Cana, and if you’re a fan of cinnamon, add some in!  The toppings can be modified to the containers you have available.

Mexican Tofu Scramble:

Pesto Zucchini Noodles with Chicken:

For this recipe the chicken is cooked, so we won’t be cooking it during class. I highly recommend making your own pesto, it’s super easy and great on other dishes throughout the week. I’ve add a bonus recipe for a dairy free pesto.

The BEST Mango Salsa!

Mango Salsa

3 mangos, diced
1/2 red pepper diced
2 cloves garlic minced
1/2 red onion, diced and soaked in cold water
1 bunch cilantro chopped
2 Tsp. Olive oil
1 tsp. Cumin seeds
Juice of 1-2 limes to taste
Salt/pepper
Jalapeño diced (optional)

Assemble. Enjoy! Great with grilled pork, chicken, or fish.

Have you soaked your red onion in cold water before? It's is great for taking away that extra oniony bite!
